Fermentation tank introduction |
Fermentation is the process of producing alcohol and carbon dioxide by anaerobic respiration of yeast. This is the real "beer-making" stage. Yeast fermentation requires a process of aerobic respiration first and then anaerobic respiration. Aerobic respiration yeast multiplies in large numbers to provide more yeast for anaerobic respiration later. Anaerobic respiration produces the final alcohol and carbon dioxide after oxygen is used up.

Beer fermentation tank
The fermentation tank is the place where alcohol is finally produced. The size and number of fermentation tank determine the final output of the brewery. Fermentation tanks are generally as large as the brewhouse or twice as large as the brewhouse. But for large brewery that can produce multiple batches per day, the fermentation tank can also be several times the size of the brewhouse.
Why is there such a requirement for the size of the fermentation tank? The time from the first wort entering the fermentation tank to the last time the wort enters the fermentation tank is called the full tank time, and the full tank time is preferably within 24 hours. If it exceeds 24 hours, it will affect the reduction of diacetyl to butanediol. If the diacetyl content is too high, it will cause beer to produce a rancid taste.
