Distilled liquor is a variety of alcoholic beverages with higher ethanol concentration than the original fermented liquid. Sugar and starch are fermented by yeast to produce alcohol. The boiling point of alcohol (78.5°C) and the boiling point of water (100°C) is different, the original fermented liquid is heated to between the boiling points of the two, and then the alcohol and aroma substance can be steamed and collected. A special distillery is used to heat the liquor. Due to the different volatility of the various substances contained in them, the relative content of various substances in the steam and in the liquor is different during heating and distillation.

Distilled liquor is obtained by separating the original liquor of alcohol from the water by using the different boiling points of alcohol and water. This requires special distillation equipment. Distilled liquor has a high alcohol content after purification.Fermentation liquor is an alcoholic beverage produced by cellaring over a period of time, which is not strong.

Brandy, whiskey, rum, vodka, gin, tequila, and Chinese liquor are all distilled spirits, and most of them are spirits with higher degrees. The production process is to first brew, then distill and then cool, and finally get a high alcohol solution beverage. Generally the alcohol content of brewed alcohol is less than 20%. Distilled spirits can reach more than 60%.
