No two yeast strains have the same characteristics. The two main types of yeast used in beer equipment are: ale yeast and lager yeast.
1. Ale Yeast Fermentation
Ale yeasts can control higher temperature levels than any other major yeast used in beer development and maintaining a constant temperature level is an important part of the final results presented. Because it collects near the top of the mix, beers using ale yeast will develop a thick head of yeast. Brewer's yeast can also ferment quickly, with the fastest options completing the entire process in about 12 hours, increasing to several days.
2. Beer's yeast: low and slow
Beer's yeast has not been in widespread use for nearly as long as ale yeast, but its use has actually exploded in popularity since it was originally isolated. Lager yeasts live a little longer than ale yeasts, and beers using brewer's yeast quickly became a huge success through automation, in part because of their longevity.
3. Lager yeast fermentation
Brewing beer with lager yeast requires lowering the overall temperature throughout the fermentation process. Ale yeast also takes more time to fully ferment than ale yeast. The longest fermentations with lager yeast can last several weeks, so make sure you allow enough time before using this line of yeast.
