After the beer completes the primary fermentation process, we need to transfer the draft beer to aseptic storage tanks for the secondary fermentation process. Transfer takes 1-3 days.
The ideal method of transfer is to remove the air from the tank with water, then remove the water along with the carbon dioxide to avoid exposure of the beer to oxygen.
After the draft beer enters the tank, a space of 10-15 cm should be left at the top to facilitate the discharge of air above the beer layer. If the residual sugar content is too low for secondary fermentation, we need to add 10-20% high fermentation alcohol (fermentation around 20%). Therefore, when we ship beer to the brewery, we need to make room for high fermentation wine in advance. After 2-3 days of top fermentation, add high-fermentation wine, and then seal the tank for secondary fermentation.
There are two ways to get delivered power.
1. We can use the gravity of nature to keep the water tank at different heights.
2. Through the pumping motor, but the pump needs to be sterile.
