1-Beer brewing process:

The craft beer brewing process is completed by the main processes of malt crushing, malt mashing, wort fermentation and beer maturation. Details can be seen in the process drawing below:

  

2-Beer brewing equipment based on the process

Craft beer equipment mainly includes milling system, brewhouse system, fermentation system, refrigeration cooling system, CIP cleaning system, and control system.

  

(1)Milling system: The craft beer crushing system mainly adopts dry crushing method

There are two types of malt grinders: one is a disc-type grinder, and the other is a pair-roller grinder. A large number of experiments have proved that the use effect of the pair-roller grinder is significantly higher than that of the disc grinder.

 

(2)Brewhouse system: According to the requirements of output, combined with investment budget, there are mainly the following methods:

A. Mash/lauter + kettle boiling/whirlpool

B. Mash/lauter+boiling+whirlpool  or mash/boiling+lauter+whirlpool

C. Mash+lauter+boiling+whirlpool

The main function is to fully mix the crushed malt powder with water, decompose protein at a certain temperature and time, and obtain clear wort for fermentation.

Practice has proved that this combination of brewhouse system is more suitable for craft beer equipment with an output of less than 1BBL, considering land occupation, electricity consumption and operability. Whether it is  process, mashing efficiency, operation, etc., it is the most cost-effective, and the cost performance is relatively high.

  

Among them, the brewhouse heating system: mainly used for heating the wort mash and boiling process (the principle of energy saving, high efficiency and good effect).

At present, there are two heating methods on the market: one is steam heating, which has high heating efficiency, and the wort is relatively evenly heated; the other is electric heating tube heating, which is locally heated, with low efficiency, and easy to paste the pot (the heating process can be avoided by stirring), but the investment is relatively small. It can be configured according to the actual situation.

 

(3) Fermentation system:

It is mainly equipped with fermentation tanks, and may also be equipped with brite tanks. It is mainly to provide suitable fermentation temperature and pressure for yeast fermentation in the fermentation tank. The fermentation temperature and pressure are required to be as accurate as possible. Therefore, temperature and pressure must be automatically controlled. And easy to discharge yeast.

At present, there are horizontal fermentation tanks, vertical fermentation tanks, and stacked fermentation tanks on the market, which must be determined according to individual site conditions.

(4) Refrigeration system:

It is mainly used to cool down the wort after saccharification and control the temperature in the fermentation process of the fermenter. The temperature of the wort after the saccharification of the craft beer equipment is mainly cooled by a plate heat exchanger.

 

The cooling method of wort by the plate heat exchanger is mainly divided into two-stage cooling and one-stage cooling.

The one-stage cooling investment is relatively large, but it saves energy and is suitable for large, medium and small breweries with continuous production;

Two-stage cooling is more suitable for hotel-type small craft brewing equipment.

 

For large breweries, it is necessary to reasonably configure refrigeration units, Glycol tanks, cold water tanks, etc. according to the number of fermentation tanks and bbts.

(5) CIP cleaning system:

Mainly used for cleaning and sterilizing all equipment and pipelines of craft beer equipment.

 

There are two main types of small beer equipment:

One is the CIP cleaning vehicle (including: alkali tank, disinfection tank, cleaning pump, trolley). If the investment budget allows, it is best to match it. At least, the lye tank be recycled and reused to avoid waste and easy to clean.

 

The second is the CIP cleaning pump: the investment is relatively small, and the cleaning function can be fully realized, but it is not convenient, the disinfectant cannot be recycled, and there is more waste.

 

(6) Control system:

At present, there are two common control systems for craft beer equipment:

 

  • One is the digital display instrument control system: semi-automatic control mode, low cost, single meter control single tank, simple operation and easy maintenance.


  • The second is the PLC control system: intuitive operation, strong visualization, and free programming. It can record the temperature curve, realize automatic control (programs can be programmed according to the specific needs of customers), and realize the segmented control of the brew house temperature, with a high degree of automation.
