How to distinguish the quality of beer
1. The appearance of beer
(1) Color
The good pale beer color is yellowish green, light clear gold or golden. If It is dark brown and reddish brown viewed against the light,it is not good. At present, the development trend of beer is toward lighter colors, and most consumers like yellowish green and light yellow.
(2) Transparency
Pour the beer into a clean and transparent glass. The light inspection should be clear and transparent, shiny, and no obvious suspended matter; If you find a slight loss of light or suspended matter, it is better Poor; If the beer is cloudy or there is a lot of sediment, it is worse.
2. The foam of beer
For good beer, when the beer is slowly poured into a clean white glass, the foam rises high and the foam can reach 1/2-2/3 of the height of the cup. The foam is as white and delicate as snowflakes and it is long-lasting. It is worse if the foam is rough, not white but yellow, not lasting, and not hanging.
3. The aroma of beer
Pale beer should have a more obvious hop-specific aroma, and should have a delicate beer aroma after in the mouth; Black beer should have a malt aroma.It is worse if you can't smell the more obvious sprinkling and malt aroma.
4. The taste of beer
The beer with pure taste,refreshing taste and strong mellow can be called excellent beer. The temperature is very important when drinking beer. The temperature of the beer is generally 13°-15°. The amount of beer contained in the mouth should be not less than 10-25ml, and the residence time in the mouth should not be less than 15 seconds.
The taste evaluation should include four aspects: pure, refreshing, sharp and mellow:
(1) Pure
Good beer should have a soft, coordinated, and pure feeling after drinking, without unpleasant smells and unpleasant tastes. If it has obvious sourness, rancidity and barley bran taste after drinking, it is a beer with poor taste.
(2) Refreshing
The refreshing refers to the soft, refreshing, harmonious and pleasant taste after drinking beer. For good beer, the refreshing taste disappears quickly in the mouth, there is no obvious astringency after drinking. If the crude bitterness or the bitterness that stays in the throat does not disappear for a long time after drinking, and if there is irregularity, not soft, spicy, astringent and rough after drinking,and if it has a smoky taste or obvious caramel taste after drinking, it is a poor beer.
(3) Sharp
Sharp is the irritation of the mouth and tongue due to the amount of carbon dioxide in beer, which is called sharp. When the beer is drunk in the mouth, it has the irritation of carbon dioxide , and has a refreshing and pleasant feeling. It is a beer with strong sharp. If the sharp is not strong or without sharp after drinking, it is the beer with poor sharp.
(4) Mellow
After drinking, the taste of the beer is full-bodied, with a lingering fragrance, and the taste is not monotonous,it is mellow. If the taste is light, tasteless or lacks taste after drinking, it is not mellow.
