Beer brewing main process



Mashing is the first step of brewing process, occurs in this vessel.By soaking the crushed grains in heated water, sugar extraction (along with color and flavor extraction) as the main purpose of this activity is processed when enzymes (from the malt) break down the starch into maltose to produce wort.

 

Lauter,The most important provision of this vessel’s functionality is rotating rake (for cutting the grain bed for faster flow). During the undiluted stage, with support of false bottom, malty liquid is separated from spent grains. Sparge ring (with hot water) will rinse off the remaining sugars in grains to increase the fermentability level of sugar in the wort.

 

Process of wort boiling, and flavor addition are managed in this vessel. This is the process where the most of chemical and technical reactions (wort sterilization, bitterness/aroma flavor, enzymatic process suspension, proteins concentration) that in brewing session occur.

 

During the whirlpool session, the flavored wort (which is transferred from boil kettle) are separated from thicker partials (trub) which will be flashed out through dump port while the wort will be out through wort port. This separationcourse will allow the wort to be clearer and hoppier.

 

Fermentation is ferment cooled wort in fermentation tank after adding yeast and sterile air. Fermentation is to convert maltose in wort into carbon dioxide through the effect of yeast and produce various flavor substances . After a certain period of fermentation, it becomes a mature fermentation liquid, also known as "fresh beer".

The heating method of mashing system can be electric heating,steam heating and direct fire heating.

  • Electric heating,it will need a electric heating pipe.Its advantage is save equipment cost,but for some other countries where electricity is very expensive,its using cost is expensive.Then they will choose direct fire heating and steam heating.The disadvantage of electric heating is that it is easy to occur paste pot.

  • Steam heating,it is the most stable and efficient heating method,but it will need a steam boiler(gas boiler,diesel boiler and electric boiler)and will add some equipment cost.

  • Direct fire heating method,for some countries where the electric is expensive and steam boiler using is very strict,this way is suitable.

Fermentation tank will contains all necessary accessories,including breathing valve,hops adding port,CIP arm,pressure gauge,mechanical regulation valve,sample valve,temperature sensor,thermometer,carbonation stone,raking arm,drain outlet.....


The angle of the cone bottom is generally 60°-80°, and also 90°-110°, but this is mostly used for large-capacity fermentation tanks. Generally, the diameter-to-height ratio of the tank is usually 1:2—1:4. The tank should not be too thin and high, so as not to cause strong convection and affect the sedimentation of yeast and coagulum. The working pressure of the general fermentation tank is controlled at 0.2MPa-0.3MPa. The inner wall of the tank must be smooth and flat, and the inner wall of the stainless steel tank should be polished
