Beer brewing water adjustment

As beer consists mainly of water, the quality of this ingredient is one of the most important items whenever considering a brewery location. Certain minerals, hardness and acidity is necessary to get the best water for brewing.


These days, minor water corrections can be made and water can be treated for low or high levels of certain minerals or chemical compounds can be filtered out.


At DEGONG we have the necessary knowledge in house to perform a water analysis for you and recommend any adjustments if needed.


Malt mills

Malt mills are used for milling the malt. A roller mill consists of a even number of steel cylinders in between which the grain is crushed.


This process is necessary to be able to extract the necessary elements out of the malt during the mashing process.

Furthermore will the crushed malt hulls function as a supplemental natural filter bed during filtering clarifying the wort.


Brewery yield is strongly related to the quality, adjustment and operation of your malt mill.

Mashing tun and brew kettle 

A mashing tun, also called mashing kettle, is used for mixing and heating a mixture of malt and water in a process called mashing.

A kettle, also called boiling kettle, is used for boiling wort, coming from the lauter tun, with hops and sometimes other adjuncts.


Depending on the size of the brewery mashing and boiling can be done in the same vessel or separate vessels can be foreseen. The mashing tun/kettle is made out of stainless steel or copper and has a typical capacity of 5, 10, 15, 20, 25, 30 or 40HL (1HL or hectoLiter equals 100 liters).


With systems heating is done with steam that heats the side and bottom of the cooking. Steam heating systems are a lot better than direct heating through gas or thermal oil as they are more powerful, very responsive, and prevent the mash from caramelizing and sticking to the bottom of the vessel. Furthermore a steam operated brauhaus gives a better "rolling boil" and a better acidity extraction from your hops.


Another important aspect in the brewhouse design is the location of the mixing mechanism (agitator) in the cooking tun. This mixer is driven by a motor that with our systems can be located under the cooking tun. This is not only visually far more attractive, but its solves the problem that all breweries have which use motors located on top, namely the drip of grease into the beer.

If this happens, it ruins the entire brew. With our systems, this can not happen.


Finally the mashing tun/kettle can be equipped with a number of additional accessories facilitating the brewing and cleaning operations.

Lauter tuns

The lauter tun is used for filtering and clarifying the sugar liquid (called wort) out of the heated water-malt mixture (called mash) that comes from the mashing tun.


The lauter tun typically has the same capacity as the cooking tun and can also be made out of stainless steel or copper. It has a design with a false bottom in stainless steel v-wire and a raking gear that has the function of an agitator, a rake and a spent gain remover. This is a very unique and helpful tool because after filtering the spent grains will be automatically removed from the lauter tun, saving a lot of time and energy of the brewmaster.


Furthermore the lauter tun can be equipped with additional accessories such as sight glasses, CIP jets for simplifying the cleaning process,... The motor for operating the raking gear is also located on the bottom side of the lauter tun.


Hot water tanks

Hot water tanks, called liquor tanks in a brewery, are buffer tanks that contain hot water that will be used to sparge the grain bed during lautering to extract a maximum of sugars out of the malt.


This hot water storage tank is almost always insulated and can be heated through steam or an electric coil. Based on your brew frequency, electrical and steam capacity DEGONG can help you recommend an appropriate volume for your hot liquor tank.


Cold water tanks

Cold water tanks, or cold liquor tanks as they are called in the brewery, are buffer tanks that contain cold water that will be used to cool the wort down to a fermentable temperatu re range after boiling, using a wort cooler.


This cold water storage tank can be as simple as single skin vessels in a cold room, but can also be jacketed glycol tanks or insulated tanks with a cooling coil immersed in the water.

Beer fermenters

Fermenters are also called CCT's (Cylindrical Conical Tanks), primary fermentor or unitanks, as they are used both for fermenting and lagering.


Fermenting is the process during which the yeast transforms the wort into beer. Lagerings takes place after fermenting and is the time given to the beer to stabilize and age after fermenting.


Our stainless steel fermenters can be individually temperature controlled through glycol jackets and are mostly equipped with accessories such as overpressure and under pressure valve, water lock, CIP cleaning jet, sanitary sample valve, manhole,…


The design of our fermenters is based on our vast beer knowledge and especially the conical fermenter bottom and the fact that we combine fermentation and maturation in the same vessel is very important.


When calculating your fermenting and lagering capacity and configuration sufficient time for fermenting and lagering to produce quality beers must be taken into consideration.


Beer filters

Beer filters are used to filter yeast, proteins and other impurities out of the beer as it is being transfered to the distribution tanks or CBT's (Clear Beer Tanks).

Beer filters are only necessary if you want to produce clear beers and for certain beer styles (such as Belgian Witbier) beer filtration is therefore not needed.


For beer filtration you can opt for a food grade DE filter (Diatomaceous Earth steel beer filter or Kieselguhr filter) or a plate and frame filter, also called plate and frame press, with filter pads.

Beer distribution tanks

Beer distribution tanks are often also called serving tanks, tax determination tanks or clear beer tanks (=CBTs).

These tanks are used for the storage of the beer prior to being served or packaged.

Depending on their application the beer serving tanks can be glycol jacketed or can be located in a cold room.

For brewpubs serving is often done by pumping or pressurizing the beer toward the serving location.


We can offer distribution tanks that are designed in such a way that there is no contact between the beer and air, nitrogen or CO2. With this system all risks for increased air volume, oxidation, or over-carbonation are eliminated.


The choice of good quality distribution tanks is a must for quality beer and a fluent service at beer filler or the bar.
