What is the general wort concentration of craft beer?

Craft beer is now highly regarded in the market because it is more in line with people's health concepts and needs, and there is a certain difference from ordinary beer. Ordinary beer is mainly made of grains and high-quality water. Brewed, after specific yeast fermentation, will be rich in carbon dioxide, but craft beer will not add artificial colors or other raw materials. But in the brewing process, companies usually do not consider cost requirements. According to different concentrations of beer, the concentration of wort is also completely different.

1. Low-concentration beer

The concentration of wort is 6°-8°, and the alcohol content is also the lowest, generally 2%. It is most suitable for drinking as a refreshing drink in summer. The disadvantage is that it has poor stability and short storage time.


2. Medium-concentration beer

The wort concentration is 10°-12°, and the alcohol content is about 3.5%. 10° is the most common. The main varieties of high-end industrial beer production in my country are about 10°.


3.High-concentratation beer

The concentration of wort is 12°-20° and the alcohol content is about 5%. It is recognized internationally that beer above 12 degrees Celsius is a premium beer. The higher the concentration of wort, the better the nutritional value. At the same time, the foam is delicate and long lasting, the wine tastes mellow and soft, the shelf life is also long, and the taste is the best.

What are the differences between craft beer and industrial beer


First, the brewing materials are different. 

Beer is a low-alcohol fermented wine containing carbon dioxide, which is brewed by adding hops (or hop products) with grains and water as the main raw materials through yeast fermentation. According to the raw materials and fermentation process, beer can usually be divided into craft beer and industrial beer. 


1. Craft beer: Only use malt, hops, yeast and water for brewing, without adding any artificial additives. Compared with industrial beer, there is more malt content, more hops are added, and the brewed wort has a higher concentration. Usually, craft beer does not need to consider the cost too much when brewing, and most will choose the best raw materials to brew. 

2. Industrial beer: It is also brewed using malt, hops, yeast and water, but in pursuit of cost, more raw materials such as rice, corn and starch are used instead of malt. The beer wort produced in this way has a very low concentration and a light taste.


Second, the fermentation process is different.


The fermentation process of craft beer and industrial beer is also different. Usually craft beer uses Ales (upper fermentation process), and industrial beer uses Lagers (lower fermentation process). The main difference is the location of the yeast during the fermentation process and the fermentation temperature. 

1. Craft beer: mostly Ale process. Yeast works at the top of the fermentation tank and floats above the liquor. The fermentation temperature is generally controlled at 10-20°C. Fermentation tanks are usually small, and filtration and sterilization treatments are not performed after fermentation. 

2. Industrial beer: mostly Lager process. Yeast works at the bottom of the fermentation tank and sinks under the liquor. The fermentation temperature is generally controlled below 10°C. Fermentation tanks are large, and filtration and pasteurization are usually used after fermentation to increase the shelf life of beer.


Third, the fermentation time is different.

1. Craft beer: Because there is no need to worry about the cost too much, the fermentation time is often not paid much attention to, and the time cost is not considered too much. The most traditional craft beer fermentation time can be as long as 15 days-2 months, so that the beer is fully fermented, the wort concentration is higher, and the flavor is more intense. 

2. Industrial beer: For industrial beer, time is money, so the fermentation time of industrial beer is usually only about 7 days, so the fermentation will not be particularly sufficient, resulting in low wort concentration and lighter flavor.
