Fermenting is the process during which the yeast transforms the wort into beer. Lagerings takes place after fermenting and is the time given to the beer to stabilize and age after fermenting.

The wort recirculation process inside the wall under the level of the liquid and the transfers from the lower part, limiting the possibility of oxidation of the wort, together with the lautering performed in an independent tun, guarantee the high efficiency of this brewhouse.
