1.Keep crystal malt to a minimum (5% or less). If you want more color, use Munich or other roasted malts.

5. Brew craft beer to make it drier. This requires the use of very low mashing temperatures to produce highly fermented worts. Alcohol will increase our perception of sweetness in craft beer, and we don't need to increase the sweetness of craft beer through large amounts of unfermented dextrin. A dry craft beer enhances the hop flavor.
