1. Fermentation Must Be in the Right State

Before distillation begins, ensure that the fermented mash has reached a thick, soupy consistency—this indicates good fermentation. But even with proper fermentation, why is additional water sometimes added during distillation?

It depends on whether you're using solid-state fermentation or liquid fermentation:

  • For solid-state distillation, adding water at the bottom of the boiler is essential.

  • For liquid fermentation, such as rice wine distillation, adding bottom water is optional—but if you do, it should be pre-boiled to avoid burning the mash.

2. Filtration During Distillation

Some brewers place a layer of cloth over the basket to separate solid rice particles from the liquid alcohol. This helps prevent clogging or burning during the distillation process, especially when using rice-based mash.

3. Judging the Right Time to Collect the Distillate

One of the most challenging parts of distillation is judging when to cut the "heads" and "tails" of the distillate. This requires experience and observation—often referred to as “looking at the distillate flowers.” These are visual cues in the vapor or liquid flow that help determine alcohol strength and quality.

Low-alcohol content appears toward the end of the run, and it's important to discard the tail-end to maintain spirit purity.

4. Temperature Control is Crucial

Distillation is one of the most technically demanding steps in the brewing process. Proper temperature control, cut timing, and observation of distillation behavior are all critical to the taste and quality of the final product.
